Eating a lot of fruits and vegetables in meals is a healthy eating habit because these are a powerhouse of vitamins and minerals and help in keeping the body healthy. One such vegetable is Cauliflower is one of the most important sources of vitamins. Cauliflower is a rich source of Vitamin C with a high density of nutrition. Cauliflower has a low fat content, has a high dietary fiber and is rich in folate and water content. Cauliflower is a member of the brassica family, the same family to which broccoli and cabbage belong. All these contain high levels of phytochemicals. Phytochemicals are good for human health. The importance of cauliflower doesn’t limit here. Cauliflower is also rich in sulforaphane, which is a compound that has anti-cancer properties. This compound is released when we chop or chew the cauliflower.
In addition to this cauliflower also contains indole-3-carbinol, which is an anti-estrogen. This retards or prevents the growth of tumors that may have occurred in the breast and prostate glands. The nutrition value of cauliflower doesn’t end at this. Cauliflower is also rich in glucosinolates which improves the ability of the liver in detoxifying carcinogenic substances. It has been found that a high intake of this vegetable has reduced the risks of prostate cancer.
However, cauliflower certain compounds like goitrogens which interferes with the thyroid gland and can aggravate the stones in kidney stones. Cauliflower can be eaten in a number of ways. You can boil it, fry, as well steam it or eat it raw. The ones one dieting can eat cauliflower which is an ideal substitute for potatoes. In fact cauliflower is used to produce fauxtato- a potato substitute. The brightly colored cauliflower has higher rate of vitamins mostly vitamins A and C.
Vitamins
