It is important to mention that there exists many types of wheat flour which have different characteristics in accordance with the factors that basically concentrates on the variety of wheat, growing conditions, planting and harvesting times. Among the various types of wheat flour availed mention may be made of three kinds, wholemeal, brown or white. It all depends on how the wheat grains are milled and processed , because this affects the overall sensory, functional and nutritional properties of the flour. In the production of wholemeal flour the whole grain is used. For this type of flour , the extraction rate is about 100 percent , which means that nothing is removed during the milling process. The color of wholemeal flour is generally light brown.
