The yellow color of the egg yolk can be attributed to the presence of xanthophylls. Almost all the fat soluble vitamins like A,D,E and K are found in the egg yolk. Egg yolk is also the source of lecithin, an emulsifier. A large egg yolk contains over more than two-thirds of daily limit of 300mg cholesterol that is usually recommended. The fatty acids composition in egg yolk are:

Unsaturated fatty acids: Oleic acid 47 % , Linoleic acid 16 %, Palmitoleic acid 5 %, Linolenic acid 2 % Saturated fatty acids: Palmitic acid 23 % ,Stearic acid 4 % ,Myristic acid 1 %
Uses of egg yolk:
Egg yolk is used in different ways , it also has some other properties, take a look:

  • Egg yolks are used for cooking purpose , sometimes even separated from the egg white and used.
  • Sometimes egg yolks are used as an active component for particular painting types.
  • Egg yolks are also used in the production of egg-yolk agar plate medium (used in Clostridium perfringens tests).
  • Egg yolks contains antibody called Immunoglobulin yolk that provides passive immunity.
  • Egg yolks are also used to make liqueurs such as Advocaat.
