Dairy Produce

These are usually foods yielding high energy.
Sources of Dairy Produce:
The raw milk that is sourced from the cows are used for the processing of milk. Occasionally other sources of milk are also availed for example, goats, sheep, water buffalo, yaks, or horses. The dairy produce comprises of the milk and milk products that are source of protein, calcium, zinc and magnesium, vitamin B12 and riboflavin. Apart from this, vitamins A and D are found in whole milk and its products. Since milk has been derived from many mammal types and and used in various ways over the past years, this has resulted in the development of innumerable dairy produce items and products. The benefits of dairy produce comprises of butter, cheese, cream, yogurt and some other products such as Smetana (same as sour cream) and Lassi.
Glance at some of the types of dairy produce items or products:
Milk is an emulsion( suspension of tiny fat droplets in water). The fat droplets are caked with a thin layer of protein , thus maintaining the suspension state. Protein, sugar and mineral salts along with water soluble vitamins are the other components of the water.

Cream is outcome of separation of fat and solids from milk. It is basically fat-in-water emulsion. When subjected to the whipping method, it changes from a liquid to a foam.

Cheese is generally composed of milk solids, which includes water and other ingredients. An enzyme rennin is used. Various kinds of cheese results from different production modes.

Yogurt is milk which has been curdled and soured by the help of lactic acid, which is produced by adding harmless bacteria. Bio yogurts consist of live bacteria (or cultures).

Butter is a water-in-oil emulsion made from cream. The composition of the butter follows certain laws.
